Eggless Caesar Salad This entry was posted on Tuesday, October 1st, 2013 5:26am By Julie Wilcox Serves 1, prep time 5 minutes INGREDIENTS 6-8 large spears romaine 1 tsp. shaved or finely ground Parmesan plus 2 larger slices shaved Parmesan 1 pressed or chopped garlic clove 1 tbsp. extra virgin olive oil ¼ fresh squeezed lemon juice 2 tsps. red wine vinegar 1 tsp. tamari 1 tsp. Worcestershire sauce salt pepper tempeh bacon (optional) PREPARATION Plate the romaine spears. Combine and mix all of the dressing ingredients in a bowl. Dress the romaine and toss. Add shaved Parmesan to top of the salad (optional). Optional: Heat a skillet with 1 tsp. olive oil. Add and sautée 2 strips of tempeh bacon. Remove tempeh from pan and chop into small slivers. Sprinkle the tempeh on the salad. Salt and pepper to taste. Serve.
