Vegan Salad: Kale, Sunchoke, Parsnip And Walnut Salad

Here is a delicious vegan salad you cannot go wrong with! Ingredients for the Vegan Salad

The Salad

Kale

Sunchokes

Parsnips

Salt

Pepper

Olive Oil

Hand Crushed Walnuts

 

The Dressing

Olive Oil

Balsamic Vinegar

Dijon Mustard

Maple Syrup

Lemon Juice

Salt and Pepper

 

How To Make the Vegan Salad

Wash and cut the sunchoke and parsnip into small pieces. Then sautee the vegetables in olive oil until they are soft and golden. Place a small bed of clean kale on a salad plate. Dapple the vegetables on top. Finish off your artwork with a sprinkle of walnuts, a grind of salt and pepper, and a light Jackson Pollock splattering of dressing over the salad.
