  •  1/3 cup cashews
  • water
  1. Place the cashews into a nut blender with enough water to cover them, about 1/8 of an inch.
  2. Puree. Add more water or more cashews to get the desired creamy consistency (thicker for a salad garnish thinner for a dish like a risotto where you want a milk-like consistency).
  3. Add salt to flavor.
  4. Serve.
