Ingredients

  • 1 cup spinach* (this is also delicious with thin zucchini rounds)
  • 1/2 cup white mushrooms, sliced thinly (shiitakes or any other variety can work too)
  • 2 ounces Manchego cheese (other meltable hard cheeses can work as can goat cheese)
  • Salt and pepper to taste

Preparation

  1. Heat 1 tbsp. olive oil in a saucepan over medium heat
  2. Add spinach and sauté until just wilted (if using zucchini, sauté until golden and caramelized on each side)
  3. Salt spinach to taste and place in prep bowl so you can reuse pan to do the same for mushrooms
  4. Add 1 tbsp. olive oil into empty pan
  5. Add mushrooms and sauté until golden
  6. Salt and pepper to taste and place in prep bowl so you can reuse pan for tortilla
  7. Place 1 tortilla into  saucepan over medium heat and cook until just golden on one side
  8. Flip tortilla
  9. Add cheese
  10. Place lid on saucepan until cheese melts
  11. Plate tortilla
  12. Top with spinach and mushrooms
  13. Serve
