Chopped Beet And Walnut Salad With Fresh Basil
Serves 1, prep time 3 minutes
- 3 medium beets, roasted and chopped
- 1 tbsp. walnuts, chopped
- 2 fresh basil leaves, finely chopped (you can also use mint)
- 2 tsp. lemon juice
- 1 tsp. extra virgin olive oil
- Combine the beets, walnuts and basil in a salad bowl.
- Dress the salad with olive oil and lemon juice to taste and toss until beets are thoroughly coated.
- Salt and pepper to taste.
- Plate the salad.
