Preparation Time
15-Minutes, Serves 2


  • 1 yellow onion, chopped
  • Olive oil
  • 2 heads of broccoli, with florets and stems cut into 1-inch pieces
  • Vegetable broth (store bought or homemade both work)
  • 1 tbsp. Vegan or regular butter
  • Salt and pepper to taste


  1. Heat olive approximately 1 tbsp. oil in a pot over medium high heat
  2. Add onion and sauté until transluscent
  3. Add broccoli florets and stems
  4. Drizzle some more olive oil over broccoli (about 1 tbsp.)
  5. Sauté broccoli tossing until coated with olive oil
  6. Place lid on pot for about 3-minutes to steam the broccoli
  7. When broccoli is bright green, remove lid and add vegetable broth to cover all contents, approximately 1-inch
  8. Replace lid and cook for approximately 7-minutes (or up to 20 if you have the time)
  9. Pour all contents of pot into a blender (Vitamix preferred)
  10. Add 1 tbsp. vegan or regular butter
  11. Blend on low then high setting until soup is creamy (if too thick, gradually add more broth until you reach the right consistency of an airy cream)
  12. Salt and pepper to taste
  13. Serve
