Preparation Time
Prep Time 1 Hour, Serves 1


  • 2 small beets
  • 1-2 ounces sliced brie cheese (into a rectangle)
  • Micro greens (or arugula)
  • Walnuts
  • Aged balsamic vinegar
  • Extra virgin olive oil
  • Salt
  • Pepper


  1. Pre-heat oven to 400 degrees.
  2. Wash and peel beets.
  3. Place the beets in tin foil.
  4. Drizzle with olive oil coating evenly.
  5. Close the foil making a pouch around the beets.
  6. Place beets into a pyrex baking dish or onto a sheet pan and then into oven.
  7. Cook for 45-minutes, until tender.
  8. Remove from oven.
  9. Let cool for a few minutes until still warm but not hot.
  10. Meanwhile wash and plate your greens.
  11. Slice beets into quarters and place on top of greens.
  12. Top beets with the brie allowing it to melt from the warmth of the beets.
  13. Sprinkle walnuts around plate.
  14. Dress with a drizzle of aged balsamic vinegar and olive oil.
  15. Salt and pepper to taste.
  16. Serve.
