1. Heat the olive oil in a non-stick pan over medium to low heat.
  2. Pour the egg whites into the pan. Draw the edges of the egg whites in as they solidify.
  3. Cook until the egg whites until they are completely solid. You can place a lid on top of them to make the process quicker.
  4. Slice the avocado.
  5. Serve the egg whites with the avocado on top of or beside them.
  6. Salt to taste (optional: serve with a drop or two of hot sauce).
